Towards the bottom of this page (Under Photosynthesis) experiment 1 involves measuring photosynthesis in water plants (elodea is the one they use here but other water plants also work).  This works really well...we used it for high school students on the Siemens Science Challenge at UQ a few years ago! It is very clear the effect of light intensity on oxygen production.
